Benoît Sinthon was head chef at Casa Velha do Palheiro between 1999 and 2004 and recently reached the highest culinary recognition by seeing his work awarded by receiving a Michelin Star at the Il Gallo D’oro Restaurant, the gourmet restaurant of The Cliff Bay hotel.
